HOW TO MAKE: SUMMER COCKTAILS

Summer is FINALLY here and it feels soooo god damn GOOD! The sun is shining, the days are long and we are finally out and about enjoying the luxuries that were taken away from us in the cold winter months. 

Do you know what could make life EVEN better right now? You guessed it - a 101 on how to make your own summer cocktails. Don’t tell us we’re not good to you… 

CLASSIC MOJITO

SERVES 6

Ingredients

  • 6 limes plus 1 lime sliced, to serve
  • 4 tbsp granulated sugar
  • 4-5 int sprigs
  • ice
  • 350ml white rum
  • 600ml sparking water

Method

Chop each lime into six pieces and drop them into a big jug. Add the sugar and squish the lime wedges with a rolling pin to get out all the juices. Clap the mint springs between your hands and drop them into the jug. 

Fill up the jug about three-quarters full with ice, then add the rum. Stir to mix all the ingredients together gently and top up with the sparkling water. Voila! Serve poured into tall glasses and there you have it, you’re the queen of mojitos!

Coconut Lane Passion Fruit Martini Phone Case

 

SERVES 2

Ingredients

  • 2 ripe passion fruits, halved
  • 60ml vanilla vodka
  • 30ml passoa
  • 1 tbsp lime juice
  • 1 tbsp sugar syrup
  • Prosecco, to serve

Method

Scoop the seeds from one of the passion fruits into the glass of a cocktail shaker, add the vodka, passoa, lime juice and sugar syrup. Add a handful of ice and shake well, strain into 2 martini glasses, top up with prosecco, then add half a passion fruit to each. Serve immediately - who knew making cocktails could be so…simple?!

Passion Fruit Martini



FROZEN STRAWBERRY DAIQUIRI

SERVES 2

Ingredients

  • 500g strawberries, hulled
  • 200g ice
  • 100ml rum
  • juice ½ lime

Garnish

  • 1 strawberry, halved
  • 2 slices of limes
  • 2 cocktail sticks

Method

Blend the strawberries and push the resulting puree through a sieve to remove the seeds. Tip the sieved puree into the blender again and add the ice, rum and lime juice. Blend again and divide the mixture between 2 Martini glasses.

Thread the lime slices and strawberry halves onto the cocktail sticks and place onto the edge of the glass.
